Hrefna Rósa Sætran is the head chef at Fiskmarkaðurinn and co-owner and creator of Grillmarkaðurinn, two fabulous restaurants located in Reykjavik. She has made a mark on Icelandic food culture and has a celebrated history in cuisine, known for her restaurants, recipe books, and her role as a member of the Icelandic National Culinary Team, competing twice in the Culinary World Championships. Although she says her favorite ingredient is salmon, Hrefna places an emphasis on all the components that go into a dish, and she made it her mission to scout quality farmers to provide the raw materials that she would later use to create the menu at Grillmarkaðurinn.
